Easy Peachy Cobbler

This is a delicious Peach Cobbler than anyone can cmake. It's super easy and super yummy, great for last minute guest.

You will need:
3- refrigerated pie crusts 2 Tbls. Sugar
2- cans of peaches (in juice or very light syrup)
1 tsp Cinnamon
1/2 stick of  butter chopped in to 1/2 inch pieces

 *Pre Heat oven to 350 degrees*
                        1. Press one pie crust in bottom of a pie pan and use fork to make ridges
                        2. Take one pie crust and cut it up into about 1 inch pieces
                        3.  Pour peaches (with some juice), sugar, cinnamon, chopped butter, and chopped pie crust in a mixing bowl
                       4. Give the above a few good tosses with your hands

5. Pour into pie crust
6. Take second pie crust and roll in over the top to cover. You can also pinch the ends or use fork to close ends to ensure filling stays inside. It will be lumpy as in picture below.
8. Sprinkle a tiny bit of sugar on top and bake for about 20 (or whatever your package suggest)
9. Serve warm with Double Vanilla Ice Cream and enjoy!

Chicken Parmigiana

Parmigiana is a classic southern Italian Dish. This is the recipe for Chicken Parmigiana, but you can easily substitute chicken for eggplant and it will not disappoint. This will feed about 5 people. You can find directions for marinara under Recipe tab.

You Will Need:
1 cup Italian Bread crumbs
Fresh Italian Parsley
4 eggs
1/2 cup Parmesan cheese
1 cup flour
4 chicken breast cut in half (8 pieces total)
Olive Oil
1 lb. Mozzarella (you can use less)
Pre Heat oven to 375 degrees
Make a dredging station: 1 bowl of flour
1- bowl with 4 eggs and Parmesan cheese mixed in
1- bowl of Italian bread crumbs with chopped up FRESH parsley
Coast each piece of chicken in this order- Flour, Egg, Crumbs. 
Fry chicken for about 3 minutes on each side, just enough to get a nice golden color like the picture above.
Choose your dish you will use to bake- put your favorite SAUCE on the bottom place your chicken, cover with sauce, top with mozzarella, and repeat layers until you have used all you ingredients. Bake for 15-20 minutes until cheese is hot an bubbling.
Serve with any pasta and your favorite greens.

Marinara Sauce

You will need
(please note; this will make a huge pot you can jar it & save itor freeze. If you dont need a lot of sauce do half the recipe)
2 28-ounce cans crushed tomatoes
2 14.5-ounce cans diced tomatoes in juice
1/4 cup extra virgin olive oil
2 plump cloves garlic, thinly sliced
1 teaspoon (kosher) salt
1 sprig fresh basil
1/2 cup fresh basil leaves, torn into small pieces


Directions
In a 3-4 qt. pot, heat the oil and garlic together. When garlic turns gold add the tomatoes, salt and basil sprig. Stir well to c and bring sauce to a boil, then reduce to a simmer. Simmer sauce, 20-30 minutes, stirring occasionally until sauce has thickened. Remove from heat, check for seasoning and stir in the torn basil leaves.
